Guys, this peanut sauce is one of my favourite things about life. I take about 42 finger licks of it every time I make it. Just. Can’t. Stop.
I included the recipe for this sauce in my Easy Spinach Gomae, but it became clear that this sucker needs to stand on its own. It’s just that good. And it’s just that versatile. Oh, and did I mention it’s gluten and refined-sugar-free? =)
Not only do I dollop mounds of this peanut sauce on gomae, but it is my staple dip for salad rolls, and for my 30-Minute Satay Tempeh Bowls. Basically, it goes brilliantly on any combination of rice or quinoa, veggies, and vegan protein.
You do not need a blender to make this peanut sauce, but I prefer to use one for the velvety texture it creates. If you don’t have a blender, just mince the garlic as fine as possible, and grate the ginger.
This peanut sauce keeps for weeks in the fridge, and you know what that means – easy future meals! Booyaakashaa! Just cook up some rice, chop some veg, grill some tofu or steam some edamame, and throw some of this sauce on. BAM. Dinner done.
If you make this sauce, let me know in the comments below what you paired it with! I am always excited to try it in a different way.
Okay kiddos, no more pump up necessary. Let’s get to gettin’.
