After the wonderful feedback I received from my Happy Hiker No-Bake Granola Bars, I knew I had to create a version for all the chocolate lovers out there. And kids, we have lift off!!
These No-Bake Chocolate Pecan Bliss Bars are rich, coconuty, and packed with a perfect pecan crunch! They also take less than 10 minutes to prepare, require only 9 ingredients, and are gluten and refined-sugar-free!! So much win!!
Brandon and I have been loving these bliss bars as on-the-go snacks, and also for dessert. Paired with a glass of ice-cold almond milk, and they’re insanely hard to stop eating. And since each one contains just a teaspoon of maple syrup, I see no reason why we should. =)
As with my Happy Hiker Granola Bars, you can toast the oats first if you like in the oven at 350°F (177°C) in a single layer on a baking sheet for 10-12 minutes. This will make them fragrant and crispier, but is not necessary to wind up with totally delicious bars in the end.
Make sure to line your dish with parchment, with a little extra sticking out on the ends, so you can easily grab and remove the bar once it’s frozen. I cut my bliss bars into 1” x 3” rectangles, but you can choose whatever size and shape you like.
You can easily swap the pecans in this recipe for chopped walnuts or processed almonds. As well, you can kick the maple syrup up a notch to 1/2 cup if you want a sweeter dessert bar.
If you need to make these bliss bars nut-free, replace the pecans with a combination of ¼ cup sunflower seeds and ¼ cup hemp hearts, and swap the peanut butter for ½ cup of SunButter. To test if the mixture is the correct consistency, grab a small handful of it and squeeze it tightly into a ball with your hands. The mixture should hold firmly together, and should not stick all over your hands. If it crumbles, add more SunButter, 1 tbsp at a time. If it is too sticky, add more oats, ¼ cup at a time.
Well folks, I reckon we’re ready to roll up our sleeves and whip up some of these incredibly delicious, totally nutritious No-Bake Chocolate Pecan Bliss Bars!
No-Bake Chocolate Pecan Bliss Bars
These no-bake chocolate pecan bliss bars take less than 10 minutes to prepare, require just 10 ingredients, are gluten and refined-sugar free, and are absolutely DELICIOUS!!
- 2 cups quick oats
- ½ cup pecans finely chopped or processed into crumb
- ½ cup puffed rice cereal chopped
- ½ cup unsweetened shredded coconut
- 1/4 cup millet
- ½ cup coconut oil melted
- 2/3 cup natural creamy peanut butter unsalted
- 4-6 tbsp maple syrup
- 1/4 cup cocoa
- 1 tsp vanilla
- ¼ tsp sea salt
If toasting the oats, preheat the oven to 350 °F (177 °C). Lay the oats in a single layer on a baking sheet, and toast in the middle of the oven for 10-12 minutes. They will be fragrant and slightly crunchy, but not browned. To make these bars completely no-bake, skip this step.
Melt the coconut oil in a small pot over low heat, and whisk in the cocoa.
Add all of the ingredients to a mixing bowl, and mix well with a fork or your hands to fully incorporate the peanut butter and melted coconut oil.
- Add the mixture to a 6”x9” dish lined with parchment. Press down firmly with your fingers to work it into the corners. Add another piece of parchment to the top and continue to press down with your hands to make the surface as firm, flat, and even as possible.
Cover and freeze for at least 3 hours before removing and slicing into bars with a large, sharp knife.
- Makes 12-14 bars. Bars keep for up to 1 month in a sealed glass container in the freezer.
