Well gang, salsa doesn’t get easier than this! Just five ingredients (plus salt), one bowl, and less than ten minutes to make. OH BOY!
This salsa is so easy that I debated giving it its own post. I was just going to add it on as part of my favourite signature dish, which is coming up tomorrow (eeek!! So excited!!), but then I realized just how many places I use it. It became clear this salsa needed to stand all on its own.
When something is this EASY, and tastes this FRESH and DELICIOUS, how can you not give it some independence??
Fresh grape or cherry tomatoes are vital to making this salsa as tasty as possible. If you’re using grocery store tomatoes, I would avoid larger varieties such as roma or beefsteak, as they don’t have as much flavour as the minis. If you’re using tomatoes fresh from your garden however, then #1 – lucky you. And #2 – invite me over to have some, please??

Tomatoes are an excellent source of the antioxidant known as lycopene. Antioxidants are substances that remove potentially dangerous oxidizing agents in our bodies. As well as healing our insides, tomatoes have been linked to reduction in heart disease and cancer. They are a great source of Vitamins C and K, folate, and potassium.
As fast as you can chop an onion, slice some tomatoes, and mince some cilantro, you can make this salsa! To make it even easier, try adding this meal prep tip to your weekly routine:
I buy organic lemons and limes in large bags and zest and juice them all right away when I get home. I store the juice in sealed glass containers in the fridge, and the zest in air-tight bags in the freezer. That way, whenever I make a recipe that calls for fresh citrus juice or zest (aka, almost ALL of my recipes), all I have to do is grab some from the fridge, and BAM, she done.
As fresh and taste-bud poppin’ as this salsa is, I will warn you that it doesn’t keep overly well in the fridge for more than a day or two. For that reason, you’ll want to make sure you consume it all right away. Buuuut, I don’t foresee that being an issue. I have been known to drink the juices that settle at the bottom straight from the bowl. I just can’t help mahself…

Chunky Fresh Salsa
This salsa is SO easy, SO fresh, and SO tasty, you'll want to make all the time!!
Ingredients
- 2 c. grape tomatoes halved or quartered
- ½ c. red onion finely diced
- ½ c. cilantro finely chopped
- 2 tbsp. lime juice
- 1 tbsp. olive oil
- Healthy pinch of salt
Instructions
In a mixing bowl, add all the ingredients and gently stir with a spoon to combine. Do not over mix, as you will start to break the tomatoes down.
- Eat right away. Nom nom nom.
Recipe Notes
This salsa is best served fresh. Any leftovers will not keep well for longer than a day or two in the fridge, so eat up!!
