Golden Goddess Granola

I have had a mmmmassive love affair with granola since I was a teen. It all stemmed from my even greater love affair with junkie cereal as a kid. But let’s face it, Froot Loops, Cap’n Crunch, Frosted Flakes, and Cinnamon Toast Crunch don’t have a place in a healthy vegan diet. No matter though, because my favourite thing about cereal is combining the dry, crunchy texture with ice cold milk. These days I fill my bowls with homemade almond or cashew milk, but the effect is no less rewarding. I could eat bowl after bowl of that sweet, crunchy good stuff!

When I learned how incredibly easy it is to make granola, I was so stoked. All you need is a liquid of sorts to coat your oats in, a sweetener, some salt, then whatever spices you want to throw in. Finish it off with some nuts, seeds, dried fruit, chocolate, coconut, or whatever you fancy!

It seems the whole world has a ginormous crush on turmeric these days, and I am right there with you all. The first time I made a turmeric latte, I said, “Holy $*!t! That is so damn good!!” For me,  the mild spice of turmeric, paired with slightly sweet almond milk felt like a match made in heaven.

So, I decided to try combining my loves for turmeric and cereal. The result…? This insanely delicious Golden Goddess Granola!! Sweetened with maple syrup, spiced with cinnamon and ginger, and speckled with pumpkin, sesame, hemp, and sunflower seeds, this Triple G is now at the top of my carb-crunch hierarchy!!

This Golden Goddess Granola is also gluten-free, and ready to eat in just half an hour. Just toss the oats and shredded coconut in the oil, maple syrup, salt, and spices, then throw into the oven, and top with seeds once she’s done! BAM!

If you’ve never tried the flavour combination of turmeric, cinnamon, and ginger, I highly suggest making my Golden Goddess Smoothie. Just like us goddesses, it is an incredibly unique, sweet and spicy concoction.

Sealed in an air-tight container, this granola stays fresh for at least 3 weeks, but if you’re anything like me, it won’t last near that long in your house. Just a handful of this golden goodness on its own makes for an incredibly delicious, nutritious snackie.

Golden Goddess Granola

This super quick, easy to make granola is just like us goddesses - she's sweet, spicy, vibrant, and incredibly nourishing. Not to mention, she's damn tasty!!

Ingredients

  • 4 cups gluten-free rolled oats
  • ½ cup shredded coconut unsweetened
  • ½ cup maple syrup
  • ½ cup coconut oil melted
  • 2 tsp ginger powder
  • 2 tsp cinnamon
  • 4 tsp turmeric
  • 3/4 tsp salt
  • ¼ cup pumpkin seeds
  • ¼ cup hemp seeds
  • ¼ cup sesame seeds
  • ¼ cup sunflower seeds

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Melt the coconut oil in a small pot over low heat.
  3. In a large mixing bowl, combine the oats, shredded coconut, maple syrup, melted coconut oil, salt, turmeric, ginger, and cinnamon. Stir thoroughly to evenly coat all the oats.
  4. Spread in a thin layer on one large or two smaller baking sheets lined with parchment or reusable mats.

  5. Bake in the center of the oven for 22-28 minutes, or until fragrant and golden brown. Make sure to stir the oats a few times so they bake evenly, and swap the trays halfway if you’re using two oven racks.

  6. As soon as the oats come out of the oven, pour the seeds on top, and allow to cool fully before placing in an air-tight container.

  7. Granola keeps fresh for at least 3 weeks on the counter, or several months in the freezer.
